Perfect with a cup of hot tea, these crunchy onion vadas are easy to make and packed with bold South Indian flavours.

Ingredients

  • 2 large onions, thinly sliced
  • 1 cup gram flour (besan)
  • 2 green chillies, finely chopped
  • 8–10 curry leaves, chopped
  • ½ tsp red chilli powder
  • ¼ tsp turmeric powder
  • Salt to taste
  • 2–3 tbsp water (if needed)
  • Oil, for deep frying

Preparation

  1. Place the sliced onions in a bowl. Add salt and gently squeeze with your hands. Let them rest for 10 minutes to release moisture.
  2. Add the gram flour, green chillies, curry leaves, red chilli powder, and turmeric powder.
  3. Mix everything well until the onions are evenly coated. Sprinkle 4–5 tablespoons of water only if needed to bring the mixture together.
  4. Heat oil in a deep pan over medium heat.
  5. Take small portions of the mixture, shape them lightly into rough patties and carefully slide them into the hot oil.
  6. Fry in batches for 3–4 minutes per side, turning occasionally, until golden brown and crisp.
  7. Remove the vadas with a slotted spoon and drain on paper towels.
  8. Serve hot.
