Are you someone who wish to make a payasam which is different from the usual payasams, with not much hustle? Then try this Karikk/Ilaneer payasam. A soft, creamy dessert made with tender coconut flesh and water. This payasam can be consumed hot or chilled.
Ingredients
Tender coconut – soft pulp, 2 cups
Coconut water – ½ cup
Milk – 2 cups
Condensed milk – as per taste
Cardamom powder – 1 teaspoon
Ghee – 1 tablespoon
Cashew nuts – 1 tablespoon
Black raisins – 1 tablespoon
Badam, sliced – ½ tablespoon
Preparation
Into a thick-bottomed pan, add milk, keep stirring and boil. Once it becomes half the quantity, add condensed milk and boil for 2 minutes. Now turn the flame off. Meanwhile, into a mixer, add ¾ of the tender coconut and mix the pulp well. Then add the coconut water and mix again. Add this mixture to the slightly cooled milk mixture along with the rest of the finely chopped tender coconut pulp. Add cardamom powder and mix it all well using a fork.
Now, into a pan, add ghee and roast the cashews, badam and raisins. Add them to the payasam, cover with a lid and keep it so for a while. Serve the payasam as such or serve it after chilling it in the fridge.
