Ingredients

  • 2 cups pumpkin, cut into small cubes
  • ½ cup onion, finely chopped
  • 2 cloves of garlic.
  • 2 tablespoons whole spices (cinnamon stick, whole nutmeg, star anise, cloves, black pepper and sesame seeds)
  • 1 small dried red chilli
  • 1 tablespoon butter
  • Salt, to taste

Method

Heat the butter in a pan and add the whole spices. Sauté until they release their aroma.

Add the chopped onion and garlic, cook until it turns translucent. Stir in the diced pumpkin and dried red chilli, and sauté for about a minute.

Season with salt, cover the pan and cook until the pumpkin becomes soft enough to mash easily.

Turn off the heat and allow the mixture to cool slightly. Remove the cinnamon stick, whole nutmeg and star anise before blending.

Transfer the mixture to a blender and blend until smooth. Pour the soup back into the pan and warm it gently over low heat.

Serve hot in a bowl and enjoy a quick, flavourful homemade pumpkin soup.
