Looking for a healthy breakfast that satisfies your sweet cravings without refined sugar? These naturally sweet mango pancakes are soft, fluffy and packed with the goodness of ripe mangoes. Perfect for breakfast or an evening snack, this recipe uses fresh fruit for sweetness, with dates as an optional addition.
Ingredients
- 1 cup ripe mango slices
- 2 cups whole wheat flour
- 1 egg
- 1 to 3 dates, pitted (optional, depending on your preferred sweetness)
- ½ cup milk
- 1 to 2 cubes butter, for cooking
Method
- Add the ripe mango slices, wheat flour, egg, dates (if using) and milk to a blender or mixer jar.
- Blend until you get a smooth, lump-free batter. If the batter is too thick, add a little more milk to achieve a pourable consistency.
- Heat a non-stick pan or griddle over medium heat and lightly grease it with butter.
- Pour a ladleful of batter onto the pan and gently spread it into a pancake.
- Cook for 2 to 3 minutes, then drizzle or brush a little butter on top. Flip and cook the other side until golden brown.
- Repeat with the remaining batter.
Serving Suggestion
Serve warm with fresh mango slices, chopped nuts or a dollop of yoghurt for a wholesome meal.
