Ingredients
- 1 cup soya chunks
- ¼ cup sweet corn kernels
- ¼ cup onion, finely chopped
- 1 tbsp turmeric powder, divided
- ½ tsp chilli powder
- ½ tsp garam masala powder
- ½ tsp pepper powder
- 1 tbsp salt, divided
- 2 tbsp oil or butter, for shallow frying
- Wheat flour, as required
Method
- Bring some water to a boil in a bowl or saucepan. Add ½ tablespoon salt and ½ tablespoon turmeric powder to the hot water.
- Add the soya chunks, cover with a lid and let them soak for 10 minutes, or until soft.
- Drain the water completely and gently squeeze out any excess moisture from the softened soya chunks.
- Transfer the soya chunks to a mixer jar and pulse briefly to obtain a coarse texture.
- In a mixing bowl, combine the coarsely ground soya, chopped onions and sweet corn kernels.
- Add the remaining turmeric powder, chilli powder, garam masala powder, pepper powder and salt. Mix well.
- Shape the mixture into small round or oval cutlets. If the mixture feels too soft or loose, add a little wheat flour to achieve a firm consistency.
- Heat oil or butter in a pan over medium heat. Place the cutlets on the pan and shallow-fry for 3-4 minutes on each side, or until golden brown and crisp.
- Remove and drain on kitchen paper.
